This simple scallion sauce is delicious served over or as a dipping sauce with boiled chicken, vegetables and rice.- 1/4 cup canola or vegetable oil
- 8 scallions, thinly sliced
- 2 cloves garlic, finely minced
- 1-1/2 Tbsp. grated ginger
- 1/2 cup chicken or vegetable broth
- 1 tsp. salt, more to taste.
- In a small saucepan, heat oil over medium heat. Add scallions and cook for about 2 minutes.
- Add garlic and ginger and stir in. Reduce heat to medium low and cook scallion mixture until scallions are very soft but don't let them brown, another 5 minutes or so.
- Add broth and salt, stir together. Taste and add more salt if you like.
